
These are an old childhood favourite of mine, and probably every other kid in New Zealand, as the recipe has been published in the very popular Edmonds Cookbook for decades. It’s a super easy recipe, takes next to no time and easy measuring and mixing means they’re great for little helpers. The Hokey Pokey flavour comes from a combination of the golden syrup and the hint of baking soda.
Hokey Pokey Biscuits
- 125 g Butter
- 1/2 cup Sugar
- 1 Tbsp Golden Syrup
- 1 Tbsp Milk
- 1 1/2 cups Plain Flour
- 1 tsp Baking Soda
Preheat oven to 180°C. Line or grease two baking trays.
Place butter, sugar, golden syrup and milk in a saucepan and stir over moderate heat until butter is melted and mixture is close to boiling. Remove from heat and allow to cool to lukewarm.
Combine sifted flour and baking poweder, and mix well. This is where little helpers come in.
Roll into little balls, place on tray and flatten slightly with the back of a fork. Bake 15-20 minutes or until golden brown.
